Low Carbs or Low Fat? Try again...

You know...

Proponents of different diet brands (fads) keep assuring us that their diets give us the best possible results. Low Carbs followers (like the Atkin diet) reckon this regime delivers results faster than your low-fat-low-calorie counterparts.

Low carbs people are correct, I'm afraid to say. Low carb works faster... and it works.

My sister is currently on a very brutal regime fit for a zen-buddist monk on a detox mission, and she has lost 3.4 kg in 5 days! (That's 7.4 lbs!).

I have no doubt she'll keep losing weight at that drastic rate. I wish her the best (and my compassion, as she is not following Atkin's, but another brand of controlled eating regime... and on that one, you do feel very hungry... reportedly.... Unless you drink galons of water, that is!).

But the point is not whether you lose weight, or how quickly. The point is: lose weight in a healthy way, and keep it down. A crash diet can give you results quickly, but will you be able to sustain that success? Or will it be a short-lived one?

If you are trying to lose weight, you might consider how much protein you are consuming. Adding a small portion of protein to meals and snacks just might shrink your appetite, allowing you to eat fewer calories during the day.
The article contains a few tips that might help you shed pounds without reducing your intake of healthy whole grains, fruit and vegetables.

In my own case, I still believe in the middle path: Unless you're a chronic case, you're better off following a moderate food regime with moderate exercise... but that's just me. Other folks may wish to become Shaolin monks, and do away with gastronimic pleasures... ;-)

Does Weight Training Burn Fat?

Greetings!

I hope you're enjoying your weekend thus far.

Today I want to briefly touch upon a very controversial topic in the area of weight loss: Does weight training burn fat, or does it speed up your metabolism, causing it to burn your fat after your work out?

The question is controversial because there are always those who swear black and blue that this is the case. Then again, there are those who claim that this is not the case?

A recent article I read on this topic explains how this could be a weight loss myth: Click here to read the article (a new window will open).

Regular resistance training, done correctly, has many benefits. It can prevent some of the muscle loss that occurs with weight loss. It can also lower body fat levels and even help preserve bone mass. But the idea that it can magically increase calorie-burning is "a very big stretch, [my emphasis] " said Edward Melanson, an assistant professor in the division of endocrinology, diabetes and metabolism at the University of Colorado Health Sciences Center in Denver.
I think it is worth reading the rest of the article for your benefit, if you're thinking of doing weights with the sole purpose of losing weight. It may be that you don't need to kill yourself doing weights, and that other types of exercise may give you better benefits. I live it up to you to reach your own conclusions.

Are You Allergic To Gluten?

Greetings!

One of the topics on healthy eating is that of Gluten Allergy.

I became familiar with the term several years ago, only because I know somebody who wrote a gluten-free recipe book, and I got curious and started doing a little bit of research on gluten.

The scoop is this: some people are allergic to gluten, which is a protein contained in wheat, oats, barley and other grains. Celiac disease is a typical form of gluten allergy.

The scary thing is that 1 in 250 Americans are allergic to gluten. If you're allergic to it, and lucky, you'll develop symptoms. If you're unlucky, you won't have symptoms, but you'll continue damaging your body by consuming foods that contain gluten.

I was reading this article that says that companies in America are now disclosing whether their meals contain gluten or not, and how much of it. That's a good step. Click here to check out the article. (a new window will open).

How do you know whether you're allergic to gluten? Medical tests is the only way.

However, the journey of the gluten allergic only starts from the diagnosis onwards. Where do you go from there? You can spend a lot of time searching online for the information (books, forums, networks, etc), or you can check out a complete guide to a gluten free life.

If you are allergic to gluten, or if you know somebody who is allergic to it, check out that book. It'll make your life much easier to live.

Time Compression and Putting Yourself First

Shortly after I posted the Turkish Sandwich, I came across a very interesting marketing data:

No time to eat or cook — Fully 59% of all U.S. meals are rushed and 34% of lunches are eaten on the run, according to National Eating Trends, a trend fueled by the $112 billion U.S. fast-food business. The share of dinners that came from takeout or a grocery freezer increased by 24% in the past decade, and is likely to overtake meals made from scratch in five years, predicts The NPD Group. According to the James Beard Foundation, when cream of wheat was introduced in 1893, it took 15 minutes to prepare. By 1939, it was five minutes. Now, it takes just 30 seconds. From Ubercool.


No wonder many folks are getting fat, tired, sick and divorsed! Everything is going faster and faster nowadays in the survival game in the concrete jungles out there.

This weekend, make the time to look after yourself and your family. You are the number 1 priority. Remember that. Otherwise, living does not make sense... but we only realise that till it's too late sometimes.

Turkish Steak Sandwich

Greetings!

I found this Steak Sandwich recipe in one of my BBQ books, but I did not have the time to upload it to my site. So, I've included it here.

Each Sandwich has 12 g of fat, and 2131 KJ (so, that would make it 8.5 WW pts). Compared to a footlong Club Subway (one of my favourite healthy junk meals), this sandwich is light. This is a great low fat lunch recipe to have at home.

Ingredients:

4 small (250 g) beef steaks (minute steaks)
2 Red Onions
3 fresh tomatoes (as opposed to "canned")
A large loaf of Turkish bread
8 cos lettuce leaves
1 Lebanese cucumber

For the Coriander Hummus, you'll need:

1/2 cup hummus (pre-packaged)
1/4 cup low fat buttermilk
1 Tbsp chopped fresh coriander leaves

This is what you do:

  • Slice the tomatoes, onions and cucumber.
  • Spray a nonstick frying pan with cannola oil, and heat the pan.
  • Cook the steaks on both sides, turning them only once on each side (if you turn it more than once, your steaks will go very dry, and you want your steaks cooked, but still juicy).
  • Add the tomatoes and sliced onions to the steaks and cook till tender.
  • Remove the steaks, tomatoes and onions onto a plate.
  • Cut the Turkish bread in 4 pieces, and split each piece in half.
  • Spray the pan again, and lightly "barbecue" all the split sides down till brown.
  • Combine the hummus with the chopped coriander leaves.
  • Make 4 sandwiches with the meat, tomatoes and onions, and add the lettuce leaves, cucumber and coriander hummus between the pieces of bread.

Yum, yum!

Have it with a nice cup of tea.

Additional tip: If you're at home, and have an electric grill, you can press-toast your sandwich for extra pleasure. However, don't add the cucumber and lettuce till after you've toasted the bread.

Scandinavian Fruit Soup... A very "fruity" idea!



Hiya!

In my quest for finding delicious and healthy food to eat, I came across this very unusual Fruit Soup recipe (a new window will open).

To be fair, my grandmother (who is - like my grandfather - alive at the age of 95, and still going) used to put fruit in beans soup, and I always found it weird. I just did not like the idea of combining savoury with sweet (no wonder they say that the palatte does not fully develop till your in your teens!).

Now, this soup is totally fruity! No, there is no meat, no chicken stock, no beans, no nothing but fruit! (and of top of that, you eat it chilled).

If I were you, I would not tell the kids (if any) that this is a soup. I'll pass it over as a special "dessert" treat. ;-)

As the commercial in Kellogg's says:"Don't tell them it's healthy, and they'll eat it by the box full".

Can a Yo-Yo Diet Stuff Up Your Metabolism

Greetings!

Here we are: right in the middle of the week! The weekend is just around the corner and, with it, the end of my holidays... Back to work next Tuesday, so, let's make the best out of what's left!

Today's posting is about a question that's been in the mind of many nutritionists: Does your metabolism stuff up when you do too much of a yo-yo diet?

Well, perhaps not in such un-scientific language, but you get the drift, don't you?

Just in case... a Yo-Yo diet is the pattern of losing weight (usually through restriction of certain foods), and then gaining it back again. Does that practice slow down your fat burning system (metabolism)?

An article I read recently claims that there is no proof that this is so. In other words, you can do as much yo-yo-ing (did I just invent a new term?), and your metabolism will be just fine.

But the article also points out that when you reduce your calorie and fat intake, your metabolism does slow down, as your body gets used to the new lower levels of calories and fat. That's why the last 10 pounds are the hardest to lose! Click here to check out the article (a new window opens).

The article has a small video clip that kinda reads out the written content whilst showing different people enjoying their junk food. hmmmm.... junk food.... mmmmmm ;-)

But seriously... that is why fad diets do not work. One has to change eating habits, rather than lose weight temporarely. And it is easy to change eating habits when you have deliciuos recipes to choose from... hint... hint...

Being Fat Costs You Money

Greetings!

According to a scientist for Ohio State University's Center for Human Resource Research, there is a link between being gravitationally challenged (or "being fat" in politically correct speech) and wealth.

Now, what is that link? That's the funny thing about it. Whilst the study concludes there is a link, it cannot say what it is!

I mean, the article points out that as people drop weight, they gain wealth. And it also points out that this is so mainly for white women, although black men and women also gained some degree of wealth too.

Was it because of savings in their food shopping expenses? Or because once conquering their weight, they moved on to income generating activities? Or because, looking better (?) they gained promotions at work? Or because some of them married into wealth once in shape? Hmmmm.... the mind bogles with the possibilities!

Low fat sausage recipes: Tex Mex Sausage Stew

Greetings!

I have uploaded a low fat sausage recipe: Tex Mex "Turkey" Sausage Stew.

This is a delicious 5.5 WW pts recipe you can have with a cup of steamed rice (or your favourite salad).

Did you know that normal sausages can have up to 85% fat? Of course, when you're in the weight loss journey you should avoid "normal" (fat saturated) sausages, and substitute them for low fat or reduced fat ones.

Wheat Pasta with Shrips and Vegies

Hi there,

I did not have the time to upload this recipe into my website, and I wanted to share it with you immediately ("before it goes cold"). ;-)

Per serving: Calories 570, fat 13 g, KJ 2,394, WW 9.5 pts.

Notice the large amount of WW pts! This is a dish you may want to have when you can afford to (or when you've walked your extra 10,000 steps).

Ingredients:

1/2 kg (1 lb) whole wheat penne pasta
3 Tbsp extra virgin olive oil
1 tsp crushed garlic
1/2 kg (1 lb) Italian eggplant, cut into 1/2" cubes
3 Roma tomatoes, seeded and chopped
250 g (1/2 lb) shrimp, cleaned and deveined
1/4 cup basil, chopped

This is What you Do
1. Cook the pasta in a large pot of boiling salted water till the pasta goes tender ("al dente")

2. Meanwhile heat olive oil in a large pot or wok. Sauté garlic for 1 minute, add the eggplant and sauté for 5 minutes or until golden brown.

3Add chopped tomatoes and sauté an additional 2 minutes. Add the shrimp and cook for an additional 2-3 minutes or until the shrimp turn pink.

4. Drain the pasta, reserving 1/2 cup cooking liquid. Add both to the skillet and toss all the ingredients together. Top with fresh chopped basil.


I thought of bringing your attention this recipe after I read an article suggesting that a "Mediterranean" food regime can also be beneficial for your health and weight loss. I would still watch out for too much fat, though (unless you faithfully stick to the Mediterranean diet and levels of physical activity, that is!).

Soy vs Cholesterol and Sugar Levels

I had always heard that soy is good for you. I had also read that "too much" lecitine (one of the main substances found in soy beans) is not good for you.

Today I found yet another article about soy. This time, the article discusses how a medical study concluded that "soy proves helpful in losing weight, reducing cholesterol and blood sugar levels besides being helpful in weight loss".

Dietary Supplements vs a Balanced Diet? Who's the Winner?

According to a study conducted at the School of Medicine in the University of Boston, "dietary patterns are more promising than nutrient supplements when it comes to nutrition and optimal health outcomes..."

I personally don't mind popping in vitamins every now and then (or regularly, when I have to), but I believe the best sources of nutrition come "the natural way".

That's why I reckon that having fruit and vegie smoothies regularly is a great way of "forcing" ourselves to injest as many natural nutrients as we can.

Quick Low Fat Breakfast Recipes



Hi there!



I only like having "cooked breakies" on weekends, when I don't have to rush to work. On working days, I simply have a small portion of low fat muesli, or even a lite yoghurt.

But sometimes I feel like having something quick... but different. That's what these Quick Low Fat Breakfast Recipes are for.

I had included them before in my main low fat breakfast recipes page, but had to pull it down for a little while to make it a bit easier to read.

McDonald's Diet?: Don't Try This At Home!



Hey!

I was about to close my blogger, when I saw an article about a woman who claims to have lost weight by keeping a McDonald's diet for 2 months! Click here to check it out (a new window will open).

Now, you may recall the Super Size Me documentary, where this dude went on a McDonald's intensive diet for a month, gained lots of weight, and poisoned his body with so many toxins.

Well, this woman claims to have lost 30 lb after living on a "restricted calories" McDonald's diet. But if you read the article carefully, you'll notice that she restricted her calorie intake to 1200 a day.

Now, if you go to the McDonald's site and check the fat and KJ content of their meals, you'll realise she could not have eaten the same things the documentary dude had.

I still think there are better ways to eat healthy. But that's just me.

Chocolate May Be Good For You

"I knew it!" (that's my brief and poor impersonation of Inspector Gadget).

Now there's an article claiming that chocolate is good for you.

But before you run to your nearest candy bar to stock up your chocolate supplies for the rest of the year, this only applies to "dark chocolate".

Serrina does not like dark chocolate because it tends to be bitterish. I don't mind it. Then again, sometimes I would eat anything. But having access to dark chocolate is a blessing when your counting your points.

Hi again!





Don't mind my pictures. I took the one above from my front door, as I was going to work early in the morning a few weeks ago... The one below is of one of my kids... and the fluffy one is "my child", featured in some pages of my site.





I'm just playing around with the new blogger feature that allows you to place pictures directly from your blogspot editing boxes.

By the way... I was reading a very interesting article that claims that studies reveal that some weight-loss supplements can be harmful for obese people. According to the article:

Weight loss supplements containing ephedra and guarana may change cardiovascular and metabolic conditions, which could be harmful to obese people who often have high blood pressure, clogged arteries, or glucose intolerance.... Results showed that repeatedly taking ephedra and guarana increased ephedrine levels in the blood, heart beat rate and blood pressure, and negatively affected glucose and potassium homeostasis.
I guess it goes to show that we ought to be careful with weight-loss supplements, and that the best way to keep slender is through a good diet and exercise.

Low Fat Marinated Grilled Steak... Everybody goes "Yummm!"




My family and I love having our relatives over at home for a BBQ once in a while. Christmas in Perth is a lovely time to do that, as it is summer here downunder. Beer (Low Carb) goes well with marinated grilled steak.

This recipe is also good if you're into Atkins, as it has only 2 g of carbohydrates.

If you're not into Atkins', then you may combine it with rice or potatoes, and salads.

Low Fat Lamb with Garlic Recipe



Lamb is not a typical Central American dish (as far as I know). So, that's why I had actually never eaten lamb till I came to Australia.

I like this lamb with garlic recipe because it reminds me of the time when a Greek friend invited over for a barbecue, and that was the best lamb dish I had up to then.

Low Fat Tuscan Chicken



G'day!

Today I cooked a delicious Tuscan chicken recipe I found in a low fat Italian cooking book.

What caught my attention about this recipe was its simplicity (yet, full of traditional Tuscan flavours because of the ingredients used).

But my Skinny Kitchen Hand and I decided to cut corners to make this recipe quicker to prepare and serve, as we did not want to spend the whole evening preparing an everyday dinner.

Not bad! No left-overs left. No prisoners taken!

Peckish? How About a Cherry Vanilla Smoothie

Greetings once again!

I'm so happy to be back from the very busy world!

I've been doing the neverending task of updating my website, and polishing a few more pages. There are many more pages to update and improve, but I'll keep doing it just "one bite at the time".

I'm on annual leave from work, but I enjoy doing this. You see, this is one of my hobbies. (and I hope you enjoy my blog and my site too!).

Anyhow, I selected one of the fruit smoothie recipes from Smoothies for Athletes Limited Edition (the ebook I'm giving away), and decided to select one of them to share it with you today:

CHERRY VANILLA SMOOTHIE (WW= 4 pts)

  • 1 cup frozen vanilla yogurt
  • 1 cup apple juice
  • 2 cups frozen cherries

Pour the liquid ingredients into the blender first (Yogurt is a liquid ingredient).

Add cherries (cored, as you don't want the bones to ruin your blender).

Put cover on and blend until smooth.

Preparation time: under 5 minutes.

Nutrition gained from drinking the smoothie: Priceless! ;-)

And you can make it even lighter if you use extra lite yogurt, and ensure that the apple juice does not contain added sugar.

This smoothie will keep you going for a couple of hours!

Do You Like Miso Soup? I love it!



Yo!

I'm back now. Hospital results were fine, and I'm healthy as I can be. So, there's nothing to worry about...

To celebrate the end of my long "liquid-only" fasting, I decided to reward myself with a delicious miso soup I found in a book called Low Fat for Kids which, unfortunately, I could not find online for you.

I'll be back in action soon...

Greetings!

I've been busy preparing for a medical test which will take place tomorrow.

I'm positive that I'm healthy, but sometimes it is better to do a good internal check up just to be sure.

The preparations for the test have left me unable to sit down in front of my computer to upload more delicious recipes since the weekend.

Tomorrow, I'll be under the influence of anaesthetics the whole day. Thus, I don't think I'll be able to resume my site tasks till Friday.

Left over for breakfast?!



I was reading an article whose author reckons that "Americans need to think outside of the cereal box" in relation to breakfast.

I liked the simile, and went on reading the article. According to her:

Breakfast doesn't have to be about oatmeal, pancakes and muffins to be nutritious - it can be pizza, burritos and left-over casserole. You just want to get some energy into your body and you want it to be fairly nourishing.


One thing that concerns me about this approach is that there are certain foods that switch off your fat burning mechanism, and certain left overs like pizza do just that.

Yes, you will get a lot of energy from such foods. But the question is whether it is energy of gradual and sustained release (in which case, it last longer), or whether it supplies an instant energy boost.

Sugar does just that. It picks you up really high, but it drops you very quickly.

Smoothies, on the other hand, tend to give you a sustained energy boost (provided you don't use sugar to sweeten it). Check these delicious low fat smoothies recipe here.

Beans, Tomato and Cheese Quesadillas?

If you're a Mexican food purist, you'll protest that this is not a "real" Mexican recipe, but a "make-believe-gringo" recipe. ;-)

I'm a purist, and that's what I thought at first. However, once I sank my teeth into them, I did no longer care about the authenticity of the recipe at all!

The beans, tomato and cheese quesadilla is very easy to prepare. Right now, our kids are on holidays, and I reckon I will make them their quesadillas a couple of times during this week.

Try them. You'll like them (the quesadillas, that is, not our kids!)

This is My 100th Blog Entry!

And welcome to my 100th entry to The Skinny Chef's Blog.

I was about to enter a recipe for a delicious zero points pumpking and leek soup, when I discovered that this is my 100th entry to my blog.

Congratulations to me! ;-) (Hey! I deserve it, so why not give myself just a bit of self adulation?)

Speech?

No. I think I'll spare you from a short episode of boredom.

Instead, I want to post that recipe I told you about.

I only include the points here because you can have as much of this soup without worrying about any significant amounts of kilo joules or fat.

It's like drinking water! (but with a lot more taste and texture!).

Ingredients:

1 large leek, sliced
1 kg butternut pumpkin, chopped
2 cups cauliflower, chopped
4 cups water
4 chicken stock cubes

This is what you do:

Combine all the ingredients in a medium saucepan, and bring to the boil.
Lower heat and simmer for 20 minutes, or until the pumkin goes tender (you can nuke it in the microwave if you wish... that'll save you about 10 minutes).
Transfer the "soup" to a blender and blend till smooth.

Post Independence Day Blues?



Greetings once again!

Most public holidays are accompanied by food.

Now, being in Australia, I don't really know what Americans have on 4th July, or whether you guys and gals have special dishes depending on the State you live in (Do let me know by dropping a comment in this blog).

... but I can bet you my lunch money that most of that food is full of sugar and fat!

So, there may or may not be regret and guilt.

If you overdid it...


... relax. Start all over again.

Weight loss and healthy eating is not about "getting there". It's about keeping a healthy diet... and if you fall... get up again!

Anthony Robbins (one of my gurus) reckons that the secret of long lasting success rests on keeping a discipline: CANI ("CAN" "I"): "Constant And Neverending Improvement".

He believes in gradual and constant positive changes on an ongoing basis.

So... If you ate too much yesterday... I hope you enjoyed it.

Now, get back onto your healthy eating routine, and be healthy.

Happy 4th July!

Greetings!

I want to wish a Happy 4th July to all my American visitors and friends. I really hope you're enjoying yourselves on this festive day, remembering the roots of your heroic history.

One particular thing I love about the American dream is that, when you think about it, you realise life is full of opportunities, and countries like America (and, of course, my beloved Australia) provide individuals with the opportunity to improve themselves in many ways.

It just takes determination and persistance.

A few weeks ago, a woman who visited my site sent me a message asking "how can I live on a low fat diet, if all I can afford is hot dogs on sale, and noodles?".

Been there. Done that. Survived it and improved it.

There are 2 answers to that question. The first answer is that, if you do your research well, there are low fat meals that are cheap to prepare, tasty, and nutritious. So, living a "low-fat life" is not necessarely expensive (or it should not be).

However, I suspect that the question involves something more than the price of food. It goes to the essence of life management: Mind Your Business.

Yes. When we're in a rut, we tend to accept that things are the way they are. We tend to think that life is that way, full of unfairness, full of injustice, and full of pain.

However, positive changes take place when:

1. We question the reality we're in, and decide that such reality is not where we want to be, and
2. We realise that we (you and I) have the power to change our lives, no matter what our circumstances are.

When you do the above 2 things... "the universe conspires in your favour".

Really... a person in financial difficulties has 3 choices in the above scenario:

1. Keep eating hot dogs on sale and noodles; or
2. Look for cheap low fat recipes and cook them; or
3. Refuse to live a substandar life and look for a way to make more money.

Personally, I like the last option. I refuse to be denied!

Or maybe you're not interested in money at all, and you're quite comfortable where you are, and you just want to be healthy and slender. If that's the case... I'm happy that you're happy (and keep it up!).

How about a Delicious Fish Chowder for Lunch or Dinner?



Hello!

Sometimes when I have a beer or three, I feel like having a nice soup. Go figure!

But being tipsy, I don't want to spend a lot of confusing time cooking a complicated soup. So, I cook a soup that is quick and easy: The Fish Chowder soup.

I love it! Even if I was not drinking at all, I love this soup on its own, or as a prelude to a main dish. It's only worth 3 points, and I can fit it in my daily points budget if I choose well my main dish.

I have also included a link that tells you why Omega-3 fatty acids are good for you (this recipe has it). Remember, eating low fat food is part of the weight loss journey; educating yourself about healthy eating is yet another component to your healthy eating plan.
