Wheat Pasta with Shrips and Vegies
Hi there,
I did not have the time to upload this recipe into my website, and I wanted to share it with you immediately ("before it goes cold"). ;-)
Notice the large amount of WW pts! This is a dish you may want to have when you can afford to (or when you've walked your extra 10,000 steps).
Ingredients:
1/2 kg (1 lb) whole wheat penne pasta
3 Tbsp extra virgin olive oil
1 tsp crushed garlic
1/2 kg (1 lb) Italian eggplant, cut into 1/2" cubes
3 Roma tomatoes, seeded and chopped
250 g (1/2 lb) shrimp, cleaned and deveined
1/4 cup basil, chopped
This is What you Do
1. Cook the pasta in a large pot of boiling salted water till the pasta goes tender ("al dente")
2. Meanwhile heat olive oil in a large pot or wok. Sauté garlic for 1 minute, add the eggplant and sauté for 5 minutes or until golden brown.
3Add chopped tomatoes and sauté an additional 2 minutes. Add the shrimp and cook for an additional 2-3 minutes or until the shrimp turn pink.
4. Drain the pasta, reserving 1/2 cup cooking liquid. Add both to the skillet and toss all the ingredients together. Top with fresh chopped basil.
I thought of bringing your attention this recipe after I read an article suggesting that a "Mediterranean" food regime can also be beneficial for your health and weight loss. I would still watch out for too much fat, though (unless you faithfully stick to the Mediterranean diet and levels of physical activity, that is!).
