This is My 100th Blog Entry!

Greetings!

And welcome to my 100th entry to The Skinny Chef's Blog.

I was about to enter a recipe for a delicious zero points pumpking and leek soup, when I discovered that this is my 100th entry to my blog.

Congratulations to me! ;-) (Hey! I deserve it, so why not give myself just a bit of self adulation?)

Speech?

No. I think I'll spare you from a short episode of boredom.

Instead, I want to post that recipe I told you about.

I only include the points here because you can have as much of this soup without worrying about any significant amounts of kilo joules or fat.

It's like drinking water! (but with a lot more taste and texture!).

Ingredients:

1 large leek, sliced
1 kg butternut pumpkin, chopped
2 cups cauliflower, chopped
4 cups water
4 chicken stock cubes

This is what you do:

Combine all the ingredients in a medium saucepan, and bring to the boil.
Lower heat and simmer for 20 minutes, or until the pumkin goes tender (you can nuke it in the microwave if you wish... that'll save you about 10 minutes).
Transfer the "soup" to a blender and blend till smooth.
