Low Fat Snow Pea and Mushrooms Stir Fry (under 20 minutes)



Yippie!

It's nearly the end of the week! (that means 1 more week for annual leave!).

I am in the process of writing a great recipes book, and I'll use part of my holidays to finalise the first draft.

I may need 5 volunteers to check the book out (and you can keep the copy with my thanks). If you're interested, drop me a line or write a comment. The only think I ask is that you read it and give me useful feedback.

I'm sure you'll like it. I don't even want to tell you what sort of cooking I'm writing about, because I want it to be a surprice.

Ok... now with the Stir Fry...

Yup, this stir fry has snow peas, bok choi and sliced mushrooms. The sauce is made of garlic and oyster sauce. It's a very easy and quick recipe to prepare in under 20 minutes, and it's tasty too: A quick Chinese dine in.

Chinese Cabbage Soup



Hi there!

As I was typing this entry, I was watching a program of very big people who can't lose weight, as they "cheat" themselves by eating secretly. They resort to surgery to fix the problem.

I must say, I'm not very keen on the idea, as I believe that a change in lifestyle and food always follows weight loss. The problem, for many, is the lack of motivation. Besides, losing weight that way does not ensure an ongoing healthy body, as one may lack fibre, and continue eating the same sort of fat saturated meals that made them big in the first place.

Anyway... I digress... Going back to the Chinese cabbage soup... yes... I found this recipe in Jim's Vegetarian Chinese Cookbook.

I must say, though, that I'm disappointed with Jim including MSG in a healthy cookbook, but I guess it is up to you and me not to include it in recipes. That's why I've included this modified recipe in my site.

Despite my disappointment, I still reckon the book is good and full of delicious recipes. If you happen to buy it, though, just use common sense and do not include MSG or excessive fat.

Healthy Deep Fried Dish?



Greetings!

When you hear or read the words "deep fried" you may be excused for thinking "unhealthy" (If you were thinking "delicious", you have not been paying attention!)...

But the Chinese omelet (egg foo yong) I found in Jim's Vegetarian Chinese Cookbook is one of the exceptions to the deep fried rule. It's delicious, and very easy to prepare.

Even better: Egg foo yong is only the basic recipe. You can add your own healthy ingredients to expand the range of flavours you are likely to enjoy with this delicious (and healthy) dish. I've included my own variation in my site. Check it out.

Low Fat Fruity Muffin



Greetings!

I was going to say "I hope you've had a wonderful weekend", but suddenly I realised we're in the middle of the week, and heading to another weekend! Time flies!

I've been revamping my website lately. My PC crashed for whatever reason, but my beloved laptop is doing overtime. ;-)

Anyway... I found this deliciuos fruity muffin recipe that I'm sure you'll enjoy. It contains sultanas (raisin), green apple, lemon, orange juice and a banana. Yum!!

It's easy to prepare, it takes only 15 minutes to mix the ingredients. Then you chuck it into the over for about 20 minutes, and you have 12 delicious low fat muffins to have... one at the time, and not many... ok? Each muffin is worth 3.5 points. 2 would be 7 points. So... be careful. Don't get hooked. ;-)

My Site Spring Cleaning Continues... leave a comment.

Wow!

I've been working on my site for several hours by now, tidying it up to make its page more appealling and easier for you to find stuff at a glance.

Although it is somehow a cosmetic change, I feel satisfied so far with the progress. But, so far I've only done most of the main pages... I still have to fix the rest of the many recipe pages.

Have a look, and let me know your views. You can leave a comment in this blog if you wish. You can even do it anonymously... but it would be nice to know who's talking to me.

Here's a Low Fat Caesar Salad (only 3 pts per serving!)



Greetings!

Ahhhhhhhhh. I'm glad the week is over!

I'm in the process of revamping my site. I want to make it much easier for you to navigate and find stuff, and keep a more consistent look and feel.

Today I have included one of the most famous salads around: Caesar salad, but with a difference: it's low fat! (did the title give it away?).

This low fat Caesar salad is only 3 WW points, and you can prepare in under 10 minutes.

This is one of those recipes you can have often, either as a main course, or as a delicious side dish.

If you don't like anchovies, you can do away with them, but really... anchovies are an integral part of the recipe.

How about trying Moroccan Chicken for Dinner?

Hi!

I have uploaded one of my most favourite recipes: Low Fat Moroccan Chicken.

I'm sure you'll love it. It has chickpeas, and other vegies. But what makes this dish absolutely delicious is the flavours and aromas you get from combining cinnamon and cilantro.

As usual, you can have it with steamed rice and/or salad.

Falling Off The Wagon, and Getting Back On



You know...

The last 2 weeks have been freezing for Western Australian standards. It's been raining bucketloads alsmost everyday, and it has been difficult to take my diary walk at lunch time.

Together with my lack of walk, there has been hunger for unholy food. :-<

Yup, even the Skinny Chef sins once in a while. :-)

The result: 2 kilos extra.

In Australia "falling off the wagon" is usually applied to people who have stopped drinking alcohol for a while, and who, for whatever reason, have started drinking again.

It also applies when you fall off any regime... like eating low fat food... for instance? :-)

I have to admit it: I fell off the wagon for a little while. Thankfully, even when I "relax" my goal, I always bounce back to it... I get back on the wagon.

I don't want you to have a buddah-like image of me. I got the haircut, but I'm not perfect.

And neither are you (if you are, please forgive my assumption). But the good thing is when you learn about the importance of eating well, and getting back into it as soon as possible.

If you do that, you can even afford to "fall off the wagon" on purpose. But that can be very tricky. You have to be very disciplined to get back on, and that only comes after you've made significant achievements in your weight loss journey.

If you fall, don't torment yourself with guilt. Don't ignore it either. Just be aware of what you are doing, and get back on track.

I also started walking again, taking advantage of the "dry" wheather, and loving it (though it's still cold).

Low fat chili con carne

We felt like trying a nice low fat chili con carne recipe I found in one of my books.

Cooking time: 30 to 40 minutes. I added a couple of tablespoons of low fat ricotta cheese on top of the cooked dish, and accompanied it with a cup of steam rice.

There was a small portion left over, but that was because we all had a double serving. One single serving would have been 4 points. (Somehow, winter nights make us hungrier than usual, but even with the double serving, I was within my daily points intake).

Mastering Weight Loss Without Dieting?

Greetings!

Last week I posted a link to an article by Kathryn O'Neill entitled "5 Top Reasons To Quit Your Diet", and I said that in some respects I tended to agree with her.

I agree with her in that "dieting" is not the answer to a weight problem. And, yes, I see excess weight as a problem.

I then went to check out her book Weight Mastery 101: The Secrets of Naturally Thin People, and I tended to agree even more with her in her findings.

You see. What she's done is that she had a weight problem herself, and she noticed those people who seem to eat any and everything, and never seem to gain weight. She concluded that:

* They aren't genetic miracles

* They don't engage in any secret 'stay slim' rituals

* They don't starve themselves, and

* They don't exercise themselves silly behind closed doors.


So, what on earth (or heaven) is it that these people do to keep slim!!?

After studying the eating and thinking habits of naturally slim people, she compiled in her book. :-)

You'd be shocked to learn that the so-called "secrets" are skills and knowledge you have within yourself, and that you can learn them and apply them too.

I'm glad that Kathryn is as "anti-diet" as I am.

I just don't like pain.

As my kickboxing instructor used to say (in Scottish accent): People often say "no pain, no gain"... but it's actually "no brain, no gain".

You don't have to suffer to lose weight... you just have to do things right, know how your body works, and know how and why to change your eating habits. That way, you can have your "sinful" treast every now and then, and remain slender and thin.

Think about it...

Going Bananas: The Collection

G'day my friends!

Today is very cold for Western Australia wheather standards. You may laugh at me if you live in a snow-ridden country, but Western Australia is normally warm, sunny, and beautiful.

But as we're starting the winter season, we're getting a fair amount of rain, and a glacial cold that penetrates your bones. brrrr!

That has made it impossible for me to go for my customary walk every day at lunch time, and I have to find a way to spend my calories without getting a pnumonia. Otherwise, the Skinny Chef will be skinny no more!

Anyhow... now with the topic of my blog... (sorry about the digression)

As I have previously mentioned it before, bananas are my favourite fruit.

Greetings!

The long weekend left me tired! I had to cut tree branches at my place and my mum's place, and it was a full on activity. My Skinny Kitchen hands and the kids also helped out. Then I returned to work.

That's why I have not written this week.

But I'm back!

In a way, I tend to agree with her. Diets suck.

This week was certainly a long one! Well, obviously it contained the same number of days and hours (duh!), but it was certainly busy at work.

Luckily, this is a long weekend for us here down under in Western Australia, as we have the "Foundation Day" public holiday. The weekend is even longer for me and my Skinny Kitchen Hand because we have Tuesday off! Great stuff! Time to recharge our batteries.

Walking Your Weight Off

I hope the title of this entry makes sense: Walking Your Weight Off.

I was reading in another blog that the best weight loss is not walking, swimming, or even jogging. Adrian Bryant, the author of Burn the Fat, argues that the best form of exercise is whatever activity you enjoy best.

And, to some degree, I tend to agree with him. You can't possibly lose weight in a healthy way if you subject yourself to do stuff you don't really like.

If you don't like jogging, you may be like somebody I know who says "help me to lose weight, Jeff. I'll start jogging today!" And then she does it for a couple of days and quits it.

Adrian's angle is fair enough... but I am still of the view that "walking" is the best form of exercise to lose weight, or at least, to keep it off.

Of course, if you don't like walking, it won't work for you. Then again, if you don't like walking, it is likely you won't like doing anything physical! (and that's no good, is it?).

Liking something is a matter of mind conditioning: An acquired taste, if you want.

I try to walk everyday for at least 1 hour at lunch time. I make up for the time at work by coming to work early. I'm lucky to have that arrangement.

For me, walking is great because:

Walking gets me out of the office, and exercises my eyes (from a confined space to an open space outside of my office).

  • Walking does not require too much effort.
  • Walking does not require expensive special equipment.
  • Walking is relatively injury-free.
  • Walking exercises the longest muscles in the body, burning more fat.
  • Walking gives me a "walker high".
  • Walking raises my methabolism to the point that my body keeps burning fat for 24 hours after I've done my walk.

Did I like walking before I started my weight loss path? Nope. But I realised that it was the easiest form of exercise I could commit to... and I was right.

I have been walking now on a regular basis for 2 years, and I have been able to keep my weight down.

Of course, all the walking in the world won't help you if you do not watch what you eat. But if you keep track of what you consume, and on top of that you walk on a regular basis, you'll be amazed at how easy it is to keep your weight down.

Try it. Give it a go for a week or 2. Make an effort to walk for fun. Associate it with "fun" and enjoy it. You'll see why I believe walking is "the" best form of exercise.

Of course, consult your physician before engaging into any form of exercise.

Warning: Low Fat Food Can Make You Fat

G'day my friends!

I'm enjoying this beautiful autumn morning here in Western Australia today. It's a bit cold, grey skies, the trees are changing colours, and winter is announcing its imminent arrival... and I'm loving it!

I reckon autumn days make me hungrier than summer days. I've noticed that. Luckily, I have a good repertoire of low fat recipes to rely on for munchies time.

But don't get me wrong. Eating too much low fat food can make you fat too. Yup! That's right. Just because low fat food has less calories and less fat than conventional fat-saturated food, it does not follow that you can eat as much as you want of any low fat recipe.

A friend of mine recently visited my website and liked what he saw. However, he told me he had no idea of how to use the recipes for his benefit. He did not understand the relationship between calories, kilo joules, grams of fat, and Weight Watchers' points.

That made me wonder how many of my visitors have the same problem. And, as a result of that question, I've decided to write a short guide on how to use my recipes. I'll publish this guide as part of the June issue of The Skinny Chef's Digest ("TSCD", the monthly free ezine from my site).

Another visitor also wrote to me recently asking "how can one eat low fat food, if you can only afford is cheap food like ramen noodles and hot dogs on sale?" That's a fair question!

I have prepared an answer to that, showing her how one can budget for a 5 days menu with about $60.00 AUD. That will also be part of the June issue of TSCD.
