Making low fat apple and oatmeal cookies

I uploaded a fantastic low fat cookie recipe: Apple and Oatmeal cookies.

This is one more recipe I've added to my low fat baking recipes. There are many more to come.

This one is high in fibre, and low in fat and sugar: Very good for you (as always "in moderation").

Yours in Health,

Jeff "The Skinny Chef"

Are Artificial Sweeteners Safe?

Greetings!

Many of us have heard how sugar is not good for you. Yet, lots of people have a craving for sweet things.

These cravings can be a hard obstacle to overcome when trying to lose weight. The solution? Well, I use artificial sweeteners.

Having said that, the question of whether artificial sweeteners are good for you or not has always remained in my mind as a silent and uncomfortable concern, especially after reading concerned people talking about the risk of using aspartame based sweeteners.

Today I read an article by Havard Health Publications, discussing this very question.

In a nutshell, the article discusses how artificial sweeteners work, and says that they are safe to use in moderation.

That's a relief! I like using Splenda for my low fat baking recipes and my coffee and tea.

The only bad experience I had with artificial sweetener was when I purchased a whole lot of sugar-free candies (called "lollies" here down under). My partner and I eat most of that bag in less than 4 hours. The result? Constant visits to the toilet for the rest of the afternoon and evening.

On the brighter side of that incident, I think I lost a kilo in the process. However, I would not recommend this as a weight loss strategy. I'm sure it's not a healthy way of losing weight!

Here is an excerpt of what the article says:

Artificial sweeteners add sweetness without calories in two ways. First, they are so sweet — 160 to 13,000 times sweeter than sugar — that you need only a tiny bit to achieve the equivalent taste. You consume a fraction of a calorie to get the sweetness of many more calories worth of sugar. Second, because the body doesn’t fully absorb them, it also doesn’t fully absorb the few calories they contain.

Low-calorie sweeteners contain only a few calories per gram. Also known as sugar alcohols or polyols, they are 50%–92% sweeter than sugar. These sweeteners are found strictly in packaged goods — look for sorbitol, mannitol, xylitol, erythritol, and D-tagatose on the ingredients list. All sugar alcohols are absorbed slowly and incompletely by the intestine, which is why they have little caloric effect. However, this property can also cause gas and diarrhea if you consume too much. For many people, more than 50 grams per day of sorbitol or 20 grams per day of mannitol can cause these problems.

The author goes on with a run down of the different no-calories sweeteners, including:

  • Acesulfame K (Sunett, Sweet One)
  • Saccharin (Sweet ’N Low, Sugar Twin, others)
  • Aspartame (Nutra-Sweet, Equal, others)
  • Sucralose (Splenda, and
  • Neotame
... and concludes that the above sweeteners are safe to use... again... in moderation.

So... there you are. You're safe (till they say otherwise, that is!).

Low Fat Brownie Recipes: Raspberry Brownies!

Last night I tried to tell you that I have just uploaded a delicious low fat raspberry brownie recipe. However, my Blogger was out of action, and I could not post anything the normal way.

Instead, I used my Hello to post a picture of myself and my friend Harley, with a brief message...

Anyhow... now we're back in business, and here we are.

You can get access to this new recipe by clicking here, or by going to the main low fat baking recipes page clicking on this link.

These raspberry brownies are worth 4.5 WW points per serving. Each serving = 2 brownies. So, although they're low in fat, you should be careful not to indulge too much, as having 4 of these babies will be equivalent of having a bit more than a third of your allowed daily intake of fat and kilo joules.

Of course, you could always have 4 if you have exercised and burned calories and fat on the day.

Jeff "The Skinny Chef"

I was trying to upload a message using my blogger account, but it seems that they are out of action as I'm writing this entry. I only managed to enter this message with my "Hello" application. I just wanted to tell you that I'm uploading a couple of low fat muffin recipes tonight. By the way... that cute thing is Harley (I mean, the dog... of course), accompanying me as I upload my latest recipes. See you again when Blogger is working again. Low Fat Baked Potatoes with Chilli and Tuna Topping!

This weekend Serrina felt like something quick to cook, as I was writing stuff for this site.

It's good to let my Skinny Kitchen Hand practice so that she can get as good as I am in the kitchen.... (and as she sees me typing this, she's objecting saying that I'm a lier and that she does not need practice)...

Well, I got to admit... after tasting her delicious low fat baked potatoes with chilli and tuna topping, she may be right. She can cook... most times! ;-)

The recipe normally takes about 45 minutes + to cook, especially if you go for the traditional oven baking method. Serrina cut this time by 20 minutes (on my advice) by "nuking" the potatoes in the microwave.

Check it out. Click on this link.

I'll upload some more low fat baking recipes soon.

Jeff "The Skinny Chef"

How to make a delicious low fat banana and strawberry yogurt pie

Earlier on today, I posted a link to an article about the effect low fat yogurt has on weight loss.

That's good news for me because I love yogurt... and bananas. ;-)

I have uploaded a low fat banana and strawberry yogurt pie recipe. Well, it's basically divided into 2 parts: The low fat pie crust recipe (which is the base for many types of pies), and the low fat banana and strawberry yogurt pie filling.

Both parts are found in the low fat baking recipes, which is the page I'm working on this week (and possibly part of next week).

I'll be adding more fillings for low fat pie recipes soon.

Jeff "The Skinny Chef"

Yogurt May Help Dieters Shed More Body Fat

Greetings once again!

Im a great fun of yogurt, particularly of the low fat kind.

My Skinny Kitchen Hand and I always include low fat yogurt in our shopping list.

I use the Nestle diet yogurt because it is the one that contains the least fat and sugar as compared to other commercially available brands in Australia... I dont know whether that is also the case in other countries, and I could not find the specs from
the Nestle site.

Anyhow... I mention the "yogurt factor" because of the claimscontained in the following article:

Yogurt May Help Dieters Shed More Body Fat

You may find it very helpful...

The article states that a recent study shows that "Replacing other foods with a
few daily servings of yogurt may help obese adults trim their
waistlines better than calorie-cutting alone."

I'll be adding a few low fat yogurt recipes soon in my www.delicious-low-fat-recipes.com site.

New! Low Fat Banana Bread Recipe

I also uploaded a new low fat banana bread recipe. It makes 20 slices, each of them worth 2 WW pts.

This recipe is part of the low fat baking recipes collection I'm uploading this week and next.

New! Low Fat Muffin Recipe: Sweet and Spicy Apple and Carrot Muffin

Muffins were once upon a time my perdition. I used to eat one or two chocolate chip muffins every working morning, amounting to more than my allowable intake of fat and kilo joules for a whole day (or doubling that, when I had 2 muffins!).

I started eating smart after that... but I missed my muffins for a couple of weeks... till I started baking my own low fat muffin recipes!

They are not only good for you, but they're delicious and you can even have 3 of them with no side effects! ;-)

I've started a new page on low fat baking recipes, and I've added the low fat apple and carrot sweet and spicy muffin recipe to that page. I'll be adding more.

How to make your own
low fat pasta dough, low fat lasagnas and more!

One of the best things you can learn to make is low fat pasta dough.

Yes, I know you can buy it "dried" and prepacked, and that the same goes for lasagna and other pastas. I agree.

But, you see, if you're really serious about eating delicious dishes that are low in fat, then making your own pasta will help for sure.

Pasta is normally made with refined wheat flour and eggs (and milk) sometimes. You can also add herbs and spices for extra flavour, and you can mix the flour with veggies like carrots and that.

However, if you susbtitue the normal flour with wholemeal flour, you increase the amount of fibre. You also lower the amount of fat by substituting the eggs with water.

I tell you how to make your own pastas my low pasta recipes page.

I've also included a link to information about the history of pasta, and what types of pasta there are... very interesting stuff.Check it out!

I've fixed the Low Fat Frittata Recipes' Links (I'm very sorry for the mistake!)

Greetings!

I have been away from work for a week renovating the 2nd bathroom and adding more delicious low fat recipes to my site.

I was happy that I was able to find and share 5 delicious low fat frittata recipes with you about a week ago, and I could've sworn the links were all functional.

Today, I returned to work (my 9 to 5), and got feedback from a friend of mine who works with me:

The Frittata links were not working!!

I am so sorry about this big doo-doo! I have now fixed the links, and ensure that you have access to these delicious low fat frittata recipes.

I hope you accept my deepest apology for this mistake.

And I hope you do check out the frittata recipes soon. They're delicious!

I've updated the low fat pasta recipes page:
2 new recipes added

I have uploaded 2 new low fat pasta recipes: the low fat baked macaroni cheese and beef casserole, and the spaghetti and musroom sauce.

Great meals for different reasons. The first one is just easy to prepare with ingredients readily available in the kitchen pantry. The second one, because the mushroom sauce dresses spaghetti with a creamy texture. Nice to have with a glass of white wine, chardonay, thanks.

I've also included a link to an article about the history of pasta, pasta dishes, and pasta types available (shapes, and that sort of thing). Great information.

Click here to check them out.

I'll be adding the low fat lasagna recipes very soon.

Stay tuned!

Greetings!

I have uploaded 2 delicious low fat banana recipes for your pleasure:

New Low Fat Dessert Recipe:
Fruited Bow Tie Salad

Greetings!

I added this low fat pasta recipe in the low fat dessert recipes page about a week ago.

However, I wanted to try it first to taste it before I could "release it" to the public.

I tried it, and I'm happy to report back that it is delicious and refreshing.

The link to that recipe had been protected by a password. But now that I'm convinced of its "deliciousness", I have lifted the protection. Go and check it out now!

By the way, I was meant to upload 7 low fat banana recipes this weekend, but I ended up not being able to do so, as I was mightily busy. I attended to a 2-days air brushing course with my eldest this weekend, and after hours I had to do some research for a court hearing I had for Monday (I'm a lawyer when I'm not cooking).

I was going to upload them all today after work but, as you can imagine, I'm very tired...

I'll be uploading them this weekend. Sorry for any inconvenience.

Regards,

Jeff "The Skinny Cheff"

I'm Going Bananas This Weekend!

Greetings once again!

As you know, I'm in the process of uploading more low fat pasta recipes. Tonight I'll include a few delicious low fat lasagna recipes for your enjoyment.

They are truly delicious, and they are low in fat. But they are worth between 5 to 7 points per serve. So, you may enjoy them with caution... not more than one serve for you.

This weekend I'm "going bananas" for 2 reasons:

The first reason is that I'll be busier than usual this weekend. I'm attending a 2 days course on artistic air brushing. Nathan, our eldest, is also attending with me (actually, I enrolled him first, and then I thought about it, and decided to go with him and learn that stuff too... just for the fun of it!).

But the second reason is that I'm uploading a whole bunch of low fat banana recipes that will sweeten your life to almost decadent levels...

There is no need to be alarmed, though.

All of these delicious low fat banana dessert recipes are worth between 1.5 to 5.5 WW points, which is a manageable amount of fat and kilo joules in anybody's weight loss plans.

Bananas are my favourite fruit. I like many other fruits, but bananas win hand down.

Ever since I remember (and I remember a fair bit far back in my life!), I have always liked my bananas. I must've been an ape in my previous life!

I remember I came up with my very first delicious recipe at the age of 4, when I made my first toasted banana and fetta cheese sandwich.

For some, that recipe is not appealling. For me it has always been heaven!

Now I now better. I substitute the normal fat-saturated fetta cheese for low fat fetta cheese, and it tastes just as good... but without the fat.

That is, in my view, an excellent low fat snack recipe worth about 3.5 points or even 4 (depending on the amount of cheese used, of course).

Not a bad recipe for a 4 years old lad, huh?

Anyhow... that's why I'm going bananas...

... and I hope you go bananas too!

On a separate note, have you joined The Skinny Chef's Club yet?

Ready for a "guilt free" low fat cheesecake?

Yup! By popular demand from my visitors, I've included 4 new cheesecake recipes for your delight and comfort!

Treat them with care, and you'll be right. Abuse them, and the scales will show you the consequences of indulgence.

Although these delicious low fat cheesecake recipes are low fat and low sugar indeed, eating the whole thing by yourself won't do you any good (other than pleasing your palatte, followed by a deep sense of guilt!).

You can have one or two cheesecake slices with no worries at all, except for the Peach Melba cheesecake, which is worth 4.5 pts in the WW scale. You can have only one slices of that one, or 2 if you do extra exercise, I suppose.

As usual, if you are a diabetic, you should check with your doctor to see if these recipes are suitable for you.

My Skinny Kitchen Hand was tempting me last night to bake some low fat (but sinful looking) custardy dessert, but baking at about 11 pm is not my kind of hobby. ;-)

I like cooking, but I also like sleeping sometimes!

Anyhow, that's that for today. These are very nice cheesecake recipes.

Click here to check them out.

Jeff

I've added 4 NEW low fat snack recipes

Greetings!

It is a beautiful day down here in Western Australia. It'll be 36 C today (97 F), and I'll be still working on my bathroom, tiling the last wall.

Never mind that! Gotta be done!

This weekend, in between my bathroom decorating duties, I managed to upload 4 delicious low fat snack recipes you can use to entertain friends, or for yourself .

They include 2 Mexican type of low fat dips, a Tortilla with Smoked Turkey, and and incredibly tasty Italian Nachos. Yummmmmm! Click here to check them out.

I will be adding 4 new incredibly delicious low fat dessert recipes soon (after I deal with today's bathroom's tasks, that is...).

So, keep an eye on this blog. ;-)

Be excellent to your self, and be cool about it!

What's So Good About Pasta!?

Some people like having the same blooming thing for dinner just about everyday!

Some others prefer a bit of variety in their meals... and yet... a small group of people like tasting something different almost (if not always) everyday.

I belong to the middle group. I don't mind all the variety available, but it is not practical. Sometimes one has to choose the "traditional" (a euphimism for "the same thing every week on Tuesdays") no-brainer meal.

You know the ones: the 15 to 30 minutes recipe you know by heart, and always have the ingredients you need in the kitchen pantry.

For some, it is a tuna dish, like the famous Weight Watchers' Tuna Loaf and Salsa. Others go to the traditional Spaghetti Bolognese (too boring to even put a link for that!).

But I can have the cake and eat it too... so to speak.

I like low pasta recipes. I have my favourite recipes, of course, but that list is always changing since I discovered many ways of preparing low fat pasta recipes as delicious no-brainer low fat meals. ;-)

So, last night, I've uploaded the first three low fat pasta recipes, which you can find by clicking in this link. It'll take you to my newest page: Low Fat Pasta Recipes.

There are many more I want to include this coming week, including pasta-based desserts and salads.

I'm really looking forward to sharing them with you!

I'll see you again soon.

Be Excellent To Yourself... and be cool about it! ;-)

I've just uploaded a
delicious Easter low fat dessert recipe!

Once again, I hope you're having a fantastic day!

I've been doing up our bathroom during my holidays... hard work, but very rewarding... eventually, that is!

In between breaks, I uploaded a delicious low fat dessert recipe for Easter. It is called Easter Ricotta Pudding, and it's only 3.5 points in the WW scale!

I will be coming up with more Easter recipes as that time of the year approaches.

I have also uploaded an article I've written based on my personal research: Why Breakfast is Good for You. I also include some tips for those who claim not being "a breakfast person" or a "morning person".

Low fat pasta recipe: Asian Noodles in Satay Sauce

I found this delicious low fat pasta Asian Noodles in Satay Sauce recipe a couple of weeks ago, but managed to cook it for dinner only last evening.

It's worth 6 Weight Watchers points, and it contains only 10 g fat per serving.

Click on the picture to get the full recipe.

Low Fat Pasta Recipe: Asian Noodles in Satay Sauce

Here is a tip: because of the lime juice used in this recipe, the pasta may taste "tangy". That's the way it's supposed to taste. However, if you want an better twist, add a tablespoon of low fat grated Parmesan cheese on top of each serving.

It's very nice in summer with a glass of Chardonney wine.

mmmm, mmmm, mmmm!

There were no left overs last night.

;->

Tonite I'm cooking a very tasty Mexican Chicken Soup worth 3 points per serve (only 3 g fat!). Yummmmmm.... (I'm getting hungry already... better go and have some breakfast!).
