Lemon Oatmeal Crispies! Yum, Yum! :-)

Greetings!

Many of you have asked me if I will continue posting recipes in this blog....

The answer is... Yes!

Here is one: Lemon Oatmeal Crispies

This recipe makes 36 delicious "diabetic friendly" bisquits/cookies.

You'll need:

2/3 cups Vegetable Oil; 1 ts Lemon flavoring;
2/3 cups Brown Sugar; 1 cup All-purpose flour;
1/2 cup Egg Whites; 1 cup Rolled oats;
2 Tbs Lemon Juice; 1/2 ts Baking powder;
2 Tbs Grated fresh or finley chop- 1/2 ts Baking soda;
Ped dried lemon rind; 1 1/2 c Crispy rice cereal;

This is what you do:

Put the oil and brown sugar in a mixer bowl in a mixer bowl and mix at medium speed until creamy.

Add egg whites, lemon juice, rind and flavoring, and mix at medium speed to blend well. Stir flour, oatmeal, baking powder, and baking soda together to blend well;

Add to the creamy mixture while beating a medium speed.

Stir in cereal.

Drop by the tablespoonfuls (level no.duooer) onto cookie ssheets left ungreased or lined with aluminum foil. Bake at 350 for 8 to 10 minutes, or until cookies are lightly browned.

Remove them to a wire rack and cool to room temperature.

That's that!

Losing Weight Can Get You Out of Jail!

Greetings!

There are many benefits to losing weight. That is a truism, and there are many ways of interpreting this....

I was reading an interesting article about a dangerous convict called Robert Cole, who apparently escaped from a hospital jail by losing weight and removing a few bricks from the window! Check it out (a new window will open).

So, there you are! Everything is easier when you're slim.

(I wonder what his diet was, and how long it took him to achieve his desired weight and size. If he wasn't a dangerous convict, he could make lots of money by selling his "Prison Escape Diet"!)

Low Fat Pills Don't Work

Greetings!

There was a report on last night's local TV news stating that several supplement/nutrition companies who distribute alternative weight-loss pills refused to submit their products to a test to see if they really work. Only 4 companies accepted the challenge.

Of the 4 products tested, none of them made any significant difference on individuals who took them.

When I finished watching the report, I thought to myself "well, we've known that for a long time!". It wasn't a new fact or discovery. It was just plain common sense.

But one thing that I found alarming was that the report concluded saying that "there is no magic bullet to lose weight. You just have to eat less and exercise more."

What an innacurate statement!

At best, it can be regarded as an oversimplified statement, which should be qualified with many "buts", "unless", and "in addition to".

It is not just a matter of eating less. Rather, the right approach is "eat smart".

If you just "eat less", your body enters into "emergency" mode, shuts down the fat burning switches, and you get double-screwed by restricting your food intake and not losing weight anyway!

Eat less what? Less food? Less fat? Less Carbs?

No, my friends! It is not "eating less".

My way of losing weight is by using the Weight Watchers Points system (TM). That is a very smart way of keeping track of calories and fat without complicating things too much. The benefit of this approach is that you get a balanced diet, you don't go hungry, you eat well (and delicious food), and you don't risk secondary effects.

As for exercise, I just walk. I love walking. I'll be incorporating other types of exercise this year.

You may want to exercise in different ways (by way of a sport, or other activities.... Heck! even vigorous sex counts!). ;-)

Happy New Year To Ye All!

Greetings!

I really hope you've had a terrific end of the year season, and that you're looking forward to a fantastic new year with plans, goals, dreams and lessons to be learned.

Since my last post, I have been doing a few enjoyable things. I had a 2 weeks break and stayed at home with my kids... sleeping in, playing games online, uploading new pages to my drawing and painting site, going to the movies, eating sinfully... but in moderation, and relaxing with my lovely partner....

The result...? Well, I'm happy to report that I only gained 2 kilos over this break. And I'm back on track again, walking at lunch time, eating well and properly, and back to work.

I'm dedicating a lot of my spare time to 2 things. The first one is my drawing and painting site, which I hope you visit (or refer other people to it). That is such a lovely project, which I'm enjoying because I am learning a lot about drawing and painting. The second project is "Classified", and will disclose it when it's ready... in or about July 2006.

In the next few days, you'll see some changes to the banner of this blog.

No. It won't become a drawing and painting blog. I'll stay with the topic of healthy eating and low fat recipes, but it won't be as often as it used to.

Keeping this blog helps me kill 2 birds with a stone (apologies to birds for this figure of speech): First, I share with you my recipes. Second, it helps me keep focused on my weight control. So, the exercise is not only enjoyable, but beneficial for you and me. How's that for a win-win situation?
