Skinny Chef's Showcase:
February's 10 Most Popular
Delicious Low Fat Recipes!

Yes, my healthy eating friends! It is the end of February 2005, and I have been pleased to see many of you checking out my delicious low fat recipes.

Ok, ok. February is not over yet in the rest of the world... and technically speaking, it ain't the end of February even here in Western Australia... but I don't think a few hours make much difference... or will it?

I'll tell you tomorrow evening (Western Australia time) if there is a need to review my Most Popular Recipes' list.

For now, my stats reveal that this month's 10 most popular (and delicious) low fat recipes were:

Crispy Chicken Breast

Bloody Delicious Dip

My collection of Weight Watchers Breakfast Recipes

Plain Old Pancakes

Quick Breakfast Recipes

Spaghetti with Fresh Mushrooms

Stir Fry Vegetables

Baked Eggs with Pancetta

Chicken Sandwich

Rainbow Sandwich

I was actually going to include this list in The Skinny Chef's Digest, but I finished the first issue at about 1:38 AM this morning and, believe you me... I did not feel like typing any more!

... may be next time I will include the list!

What do you reckon?

That's it for now! I'm off to upload a nice Asian Noodles with Satay sauce recipe I cooked this evening for dinner... and other pasta recipes for my upcoming page on pastas.

Till then...

Eat healthy, and enjoy it!

Regards,

Jeff

Roast Potatoes with Rosemary

Greetings!

As promised, I have now uploaded this delicious low fat dinner recipe for you in my website.

This is a truly delicious dish, with only 2 points per serve. Check it out here:

Low Fat Dinner: Roast Potatoes and Rosemary

You can have these potatoes on their own, or you can dress them with low fat sour cream... or even better... you can pour a couple of tablespoons of sweet chilli sauce to enhance their flavour! (YUM!)

The kids and my trusty skinny kitchen hand and I really enjoyed this dinner (which we accompanied with a nice stew... but I'll give you the recipe for that some other time!).

Enjoy... and be healthy!

Feel like having an Accordion Roast Potato?

I hope you've enjoyed the butterless bread pudding low fat recipe I posted last night.

Tonite, I'll prepare a nice low fat recipe called Accordion Roast Potatoes with Herbs, which you can have on its own (dressed with a scoop of low fat sour cream, or natural yoghurt, or even sweet chilli sauce.

I'll post that recipe in my website, but will include a picture in my next post.

Keep tuned.

It's worth only 2 points in the WW scale, and it serves 6. You can eat it cold or hot, and on its own, or with a nice low fat vanilla ice cream.

I have now added low fat dessert recipes in my site

Although I'm very conscious of what I eat, I still long sometimes for sweets. Normally, if I did not know what to cook, I would reach for my cookie jar or something full of sugar.

But I have been fortunate enough to find lots of low fat dessert recipes low in fat and sugar calories... and they taste great!

I have added - thus far - 4 low fat chocolate recipes, and 9 weight watchers dessert recipes for your enjoyment.

Check them out:Click here

I've added a Choc Orange Blancmange recipe, a Chocolate Easter Nest, a Chocolate Yoghurt Glazing, and a Low Fat Chocolate Creamy Mousse for starters.

And amongst my Weight Watchers Dessert recipes, I've included one of my favourite desserts: The Lemon Syrup Cake. This is a very popular cake at work. Everyone likes it and gets surprised when I tell them that it's a low fat cake.

Of course, if you eat the whole thing, it won't work. Eat in moderation, and you'll be right.

I'll add more of these for you later on, but I have to add more low fat recipes in other categories... so that you can cook the most delicious meals... without the fat or extra calories.

How to make a Fizzy Lassi

I've been experimenting in my search for delicious low fat recipes.

Last night I felt like having a sweet snack that would keep me "filled"... But I did not want anything over 4 points worth (in Weight Watchers' parlance, that is).

Well, I decided to see if I could come up with a lassi recipe that was fizzy... without the fat or extra calories.

A "lassi" is simply a yoghurt based drink. It's very popular in India, and I have had different variations of this drink when I've been to vegetarian Indian restaurants.

A lassi is simple to prepare. Basically you just get some natural yoghurt and mix it with water, and that's it. But this is an acquired taste, as it lacks sugar and it tastes a bit tangy.

I have experimented in the past with flavoured diet yoghurt and water, and the resulting lassi is very tasty indeed: sweet, but without sugar or too much fat.

Depending on the diet yoghurt you choose, your drink will be something between 1 to 4 points. I choose Nestle Diet Yoghurt because is the lowest in fat and kilo joules I have found so far.

Other yoghurts are labelled as being "lite" and, whilst their fat content is lower than normal yoghurt, they're worth at least twice as much as the Nestle Diet Yoghurt. The extra fat and kj, I suppose, account for the extra creamy texture found in lite yoghurt.

Ok, now to the point.

Yesterday I combined 200 ml of apricot and mango Nestle Diet Yoghurt with half a glass of diet apricot soda (which is worth "0" points). The result was a "Fizzy Lassi", which was sparkling, refreshing, filling, sweet, and low in fat.

I'll include this recipe in my website soon. But you don't need to go there if you're reading this, as the recipe is already here.

However, you may want to check the website out because I'm in the process of adding a number of delicious low fat dessert recipes including low fat chocolate recipes, low fat cheesecake recipes, and Weight Watchers dessert recipes.

They're delicious... so much so... you won't believe they're good for you.

That's it for now.

Have a great day!

Spinach and Cheese Spaghetti (Low Fat Pasta Recipe)

Tonight, my partner and I cooked a very nice meal for 4. Valentine's evening is not often possible when you have kids, but the 4 of us made the best of a pleasant evening with this delicious low fat recipe.

At only 4.8 g of fat and 460 calories (1932 kj) per portion (7 Weight Watchers' points), the meal was very filling, delicious, and full of fibre.

This is one of the pasta low fat recipes I will include soon in my website. For the time being, you don't have to wait till I upload the main site with the rest of the pasta recipes: click on this link to check it out: Spinach and Cheese Spaghetti

Kids Are Getting Fatter Nowadays

I was reading today in our local Sunday paper (the Sunday Times) that kids are getting bigger nowadays.

Why is this a problem?

Well, from a health point of view, it has been estimated that our children's generation will have a shorter life span than ourselves, due to possible heart and other weight-related ailments.

I think I have seen and read news along the same lines almost every week for the last 10 years. But, what are we doing about it? Or, more importantly, what can we do about this endemic problem?

Education is of course one of the first steps to take to tackle this serious problem. But I do not mean "leave it to the schools". I rather mean, let's educate ourselves as parents, and our kids as consumers in the art of healthy (and tasty eating).

By "education" I mean that we have to learn what foods are better for ourselves and our kids, and how to teach them to appreciate non-saturated fat based meals.

The transition to healthy eating can only be difficult because of the strong habits and conditioning our children and ourselves have experienced for a long time. But once one discovers how easy it is to cook delicious low fat recipes, the transition becomes easier to make.

I'll be adding, in the near future, a list of delicious low fat recipes you can prepare for your kids. Keep an eye on this blog, or visit my site every now and then to see what's up.

Have a great day!

Welcome To The Skinny Chef's Blog!

Dear guys and gals,

I have created Jeff The Chef's blog hoping that I'll be able to share my favourite recipes and healthy eating tips with as many as you as possible.

I have a great, tasty and growing collection of low fat recipes at www.Delicious-Low-Fat-Recipes.com, and I keep adding more and more recipes every week.

I have also had the opportunity to meet people who have found tips about how to lose weight in a healthy and enjoyable manner, and I will be pleased to share what they tell me.

Of course,You must always seek your doctor's advice in respect of matters related to your health, including weight loss or weight control. I am not a health professional, and you cannot rely on the things I share with you, as these are only of an informative value. For professional advice, consult your health professional or doctor.

Today I added a low fat muesli recipe to my website. This low fat muesli recipe makes 45 serves, each worth 2.5 Weight Watchers' points (or 4 g fat and 610 kj), and it's part of my growing collection of low fat breakfast recipes.

I have also recently added a low fat resources page, where I'll be adding useful information on related topics.

At present, I'm also working on what is arguably the one of the most popular searches in terms of low fat recipes: low fat dessert recipes. I'll tell you when it is ready to be seen.

In the meantime, I hope you enjoy this blog and visit my site.

If you have any comments, feedback, or suggestions, leave them here in these posts. I'll appreciate your contribution.

Have a great day!
